Simple Thanksgiving Menu

As with everything in 2020, Thanksgiving is going to look a little different this year! Whether you are having a small family gathering, a scaled-down Friendsgiving, or you are celebrating independently this year – here are some deliciously simple holiday meal options for you!

We start with 2 classic cocktail options – but alcohol-free! You can drink these all day with no worries. The only side effects will be perfect hydration and digestive support! On Thursday, I plan on making a big pitcher of the mock mojito and tossing some frozen cranberries in each cup for a bit of sparkle and color!

There are two super quick appetizer recipes to choose from – one with smoked salmon, one vegan. Each one only takes a few minutes to throw together so you can focus on the rest of the food.

Since the small turkeys went fast this year, many people are looking for an alternative to cooking a 20 pound bird! This menu has a great recipe that maintains all the traditional flavors using only a turkey breast.

The Roasted Butternut Squash Harvest Bowl could easily work as a side dish to your turkey or as a Vegetarian or Vegan main dish!

Including the Harvest Bowl, there are 7 different side dish recipes so that you have plenty to choose from! Some are quick, some require a bit more planning. The turkey, stuffing and green beans need a good bit of cooking time. So, if you choose any of those, it would be a great idea to start them first. Then, you can make the quicker recipes while they are in the oven.

Each recipe serves approximately 4 people (except the stuffing…. because leftover stuffing is always a good idea!). If you are cooking for 1 or 2 this year, it is easy to halve each recipe. Or cook the full amount and share with a neighbor who may also be celebrating on their own!
